You will turn one of your far burners on med heat - leaving all the other burners off. This allows you to keep temps in the smoking range of 220 - 275.   For the smoke, you will have to add it through pellets or wood chips. You can make a small \"smoke bomb\" with foil and wood chips or pellets. Or you can use an Amazin Smoke Tube. These are inexpensive little tubes that allow you to produce smoke without having a smoker.   Once you have gotten your gas grill up to the smoking range and stabilized your gas grill, you are ready to smoke.
