'At Egghead in NYC, you can order a quesadilla served with a blanket of caramelized cheese. The executive chef of the restaurant, Jason Hall, found inspiration for the dish during a trip to Mexico. To make it, Chihuahua cheese is placed directly on the griddle until it caramelizes.
