While there are some more traditional combinations of these elements, modern ramen is remixing them in some wacky ways and playing on unexpected combinations. Rinsuzu Shokudo is one such ramen shop in Tokyo, known for their Lemon Ramen and Toriten (chicken tempura) combo. It’s made with a shoyu (soy sauce) base that features a refreshing acidic kick from the lemons. Their incredibly juicy and crispy tori tempura makes for a dippable side dish. Tsukumo’s Cheese Ramen is a rich tonkotsu (pork bone broth) ramen that’s topped with a heap of shaved gouda cheese which quickly dissolves into an ooey-gooey puddle in the hot soup. It’s a hearty and comforting dish made with high-quality ingredients that will sooth the soul. KIPPOSHI’s peach ramen is made with a chicken broth soup and has a startling aroma of peach, as well as juicy peach slices to top it off, while their colorful and showstopping Blue Ramen is also made with the same clear chicken broth, straight noodles, and tender slices of chicken. The color of the broth is striking, resembling the ocean, but the flavor is not what someone might expect from a blue ramen, and is more in line with a classic chicken noodle soup. Featured ramen & Tokyo ramen shops: 1 - Lemon Ramen and Toriten (chicken tempura) from Rinsuzu Shokudo (りんすず食堂) 2 - Cheese Ramen (tonkotsu base) from Tsukumo Ramen (九十九) 3 - Peach Ramen and Blue Ramen from KIPPOSHI (吉法師) ----------------------------------------------------------------------------------------------------------------- ABOUT BYFOOD: ByFood is Japan’s one-stop platform for foodie travelers.
