'I lost count a long time ago of the number of people who have completely cured their diabetes and ceased all related medication by following a Spud Fit Challenge. My favourite story was from Robert, who had lived with type 2 diabetes for over 30 years. He had tried everything, followed doctor’s orders religiously and had only limited success. He decided to try a Spud Fit Challenge and in only two weeks he had stopped all medication his blood sugar and insulin levels were consistently great! Six months later he had successfully transitioned to a whole food plant based diet and was still free from all diabetes symptoms. The above paragraph is my standard answer whenever people ask me about how potatoes will affect their diabetes. It sounds extreme but in my experience results are typical. This works for everyone, every time. The science is so well established on this that it really should be common knowledge.
