'BUILD A HEALTHY MEAL: Diabetes-Friendly Stuffed Cabbage Roll'

'Louisiana Healthcare Connections and the LSU AgCenter have teamed up to produce the video series ‘Build a Healthy Meal.’ We’ll show you how to make easy, tasty, and healthy recipes for the whole family using low-cost ingredients that can be found in your local dollar store or grocery store.  In this segment, area nutrition agent, Claire Barbier, demonstrates how to make diabetes-friendly Stuffed Cabbage Rolls that are high in fiber, which is a great way to control blood sugar levels. These stuffed cabbage rolls are a different and delicious way to prepare cabbage that the entire family will enjoy. Serve it with a side of Cucumber and Tomato Salad to add even more nutrients.  Stuffed Cabbage Rolls  1 pound extra lean ground turkey  1 cup brown rice, cooked  ½ teaspoon garlic powder  ¼ teaspoon salt  1 teaspoon no salt creole seasoning  1 ½ teaspoons onion powder  1 large egg  1 head of cabbage  10 ounce can tomato soup, low sodium  15 ounce can diced tomatoes, no salt added  ½ teaspoon sugar  1. Preheat oven to 350 degrees Fahrenheit.  2. Place head of cabbage in large pot. Add water to cover. Heat over high heat and boil cabbage for 15 minutes, or until soft and pliable.  3. Remove cabbage from heat. Drain and cool completely. Remove hard outer veins from the leaves. Set aside.  4. Combine turkey, rice, garlic powder, salt, no-salt creole seasoning, onion powder, and egg in a large mixing bowl. Stir until well blended.  5. Place a small amount (approximately 1/3 cup) of turkey filling into the center of a cabbage leaf. Fold cabbage leaf over, tucking in the sides to keep turkey filling inside the cabbage leaf. Place cabbage rolls into a baking dish and set aside.  6. Whisk all remaining ingredients together in a small mixing bowl until smooth. Spoon the sauce over the top of the cabbage rolls.  7. Bake for 1 hour.  Serves: 6  Preparation time: 40 minutes  Cooking time: 1 hour  Source: ADW Diabetes  Serve with a side of cucumber and tomato salad.  Cucumber and Tomato Salad  1 cucumber, sliced  1 pint grape tomatoes, halved  ½ medium red onion, sliced  ¾ cup olive oil  ¼ cup balsamic vinegar  1 tablespoon garlic, chopped  ½ teaspoon black pepper  ½ teaspoon salt  1. Place olive oil, garlic, black pepper, and salt in a screw-top jar. Shake well to combine.  2. Add the cucumber, tomatoes, and red onion in a large bowl and top with balsamic dressing. Mix until the dressing coats all the salad.
