'Recipe: ( yield: 25 pies) Dough Ingredients: 2 1/4 cups all purpose flour 4 oz cold butter or margarine cubed plus 4 oz for spreading on dough 4 oz cold cookeen (shortening) cubed 1/4 tsp salt 3/4 cups ice cold water Method: 1. Pulse flour, salt, butter and cookeen in food processor until crumbly 2. Add in water gradually while food processor is on to form a soft dough 3. Empty mixture onto floured surface and form into a smooth disc 4. Wrap in plastic wrap and place in refrigerator for about 30 mins 5. Remove from plastic wrap and roll into a rectangle shape 6. Spread softened butter on dough and fold over in thirds as per video 7. Repeat rolling and spread more butter 8. Fold over in thirds again and wrap in plastic wrap and chill for another 30 mins 9. Repeat rolling and spreading butter x 2 and chill again before cutting 10. Cut into desired shapes, add filling and chill for about 10 mins before baking 11. Brush with egg wash and bake at 375°F for about 20-25 mins or until golden brown Chicken Filling Ingredients: 1 lb minced chicken 1 1/2 tsp salt 1 tsp adobo all purpose seasoning 1/2 tsp black pepper 1 tsp pepper sauce 5 sprigs thyme 1/4 cup green seasoning ( I minced shadon beni, garlic, pimento and hot peppers together) 2 tbsp oil Method: 1. Add all seasonings to chicken and mix together well 2. Heat oil in a medium pan and cook chicken while breaking it up with a spoon 3. Mince in food processor if fine texture desired Cheese Filling: Ingredients: 1 cup grated cheddar cheese 1 tsp yellow mustard 1/4 tsp salt 1/4 tsp black pepper 1 tsp pepper sauce 1 tsp parsley chopped Method: Mix all ingredients together well.
